Definitivamente soy una amante de las combinaciones. Déjame en una cocina llena de ingredientes haré todas las combinaciones posibles, sin cansarme. El plato de hoy es un ejemplo de ello. Para ser sincera ha sido un capricho de este invierno y después de hacerlo decidí que será una de mis recetas estrella. Te reto a que la pruebes y que me digas lo contrario.
Para esta receta me he inspirado en 3 de mis platos favoritos: los crepes, los canelones y la salsa boletus. Iré explicando cada uno de los pasos, así que no tendrás que preocuparte si esto asusta un poco. ¡A por ello!

Ingredientes
Para los crepes salados:
- 3 huevos
- 150 g de harina
- 160 ml de agua
- Una cucharita de nata (opcional)
- Especias: sal, pimienta y perejil
Para el relleno
- Aceite de oliva
- 1/2 cebolla
- 1 champiñón mediano
- 400 g de carne picada
- 1 cuchara de queso blanco
- 1 cuchara de tomate frito
- Especias: sal, pimienta, según preferencia
Para la salsa
- Aceite de oliva
- 2 champiñones medianos
- 300 ml nata para cocinar
- 1/4 cebolla
- 3 setas boletus deshidratadas
- Queso para gratinar
- Especias: sal y pimienta
Elaboración paso a paso
Los crepes salados
Los crepes son uno de esos platos que parecen difíciles hasta que les pillas el truco. Hay que tener cuidado con la masa, que no sea muy gruesa, pero tampoco aguada, para que no se pegue. Acostumbro poner antes de hacer cada crepe un poco de mantequilla en el fondo de la sartén usando una servilleta; así me aseguro de que me será más fácil darle la vuelta. El orden de mezcla de los ingredientes el crucial en la preparación de la masa para los crepes, ya que si no seguimos ese orden nos arriesgamos a luchar con los grumos, y esa no es una lucha fácil.
- Mezclamos los ingredientes para los crepes en este orden: primero los huevos con la harina hasta conseguir una masa homogénea
- Añadimos las especias y removemos hasta su completa incorporación a la masa.
- Añadimos el agua con la nata y removemos para que toda la masa tenga la misma consistencia y textura.
- Usamos una sartén antiadherente para hacer los crepes. Normalmente la cantidad necesaria para un crep son 3/4 de un cucharón –nos saldrán más o menos unos 9 crepes–.
Los guardamos en un plato y nos centramos en el relleno.

El relleno
- Sofreimos la cebolla con el champiñón cortado.
- Cuando la mezcla esté doradita añadimos la carne.
- En cuanto la carne esté cocinada –ya no tiene ningún rastro de carne de color rojo– añadimos una cucharita de tomate frito.
Para acabar añadimos el queso blanco –yo he aprovechado que ya tenía un poco de queso blanco con perejíl– y le añadimos las especias que más nos gusten: sal, pimienta, pimentón, algo picante; depende del gusto de cada uno. Recuerda que la carne ya está hecha, así que puedes probarla para ver si le falta algo.

La salsa
La salsa boletus es mi preferida y la uso normalmente para acompañar la pasta. Esta vez usaremos una versión simplificada de la salsa, pero prometo insistir más en ella en otra ocasión. El ingrediente clave de esta salsa son las setas boletus. Son setas deshidratadas, que se encuentran en los supermercados en unos tarritos pequeñitos y son completamente secas. Antes de empezar a hacer cualquier otra cosa, hay que cortarlas en trocitos pequeñitos y ponerlas a remojo para que se hidraten. De estas setas usaremos tanto la seta en sí como el agua.
- Ponemos las setas boletus a remojo con 4-5 cucharas de agua.
- Cortamos la cebolla muy fina y los champiñones en láminas.
- Sofreimos la cebolla con los champiñones.
- Añadimos las setas boletus y el agua a la sarten.
- Lo dejamos aproximandamente un minuto para que toda la mezcla coja el sabor del agua y de las setas boletus.
Añadimos la nata, la sal y la pimienta y lo dejamos a hervir hasta que adquiera la textura deseada. Cuanto más tiempo se deja hervir, más espesa la tendremos.

Combinación final
Ahora que ya tenemos los crepes, el relleno y la salsa es es momento de juntarlo todo:
- Encendemos el horno a máxima potencia y lo dejamos precalentar.
- Rellenamos los crepes con la carne picada.
- Los guardamos en una bandeja de horno.
- Cubrimos todos los crepes con la salsa.
- Adornamos con queso para gratinar.
Lo metemos al horno donde permanecerá unos 20 minutos.

A la mesa
Decorar el plato es una de mis partes favoritas. En este caso he elegido un contraste de colores y también he decidido que iría muy bien acompañado de un vaso de zumo de naranja. Y así ha quedado:
