Receta de pasta con salsa amatriciana

La salsa amatriciana es una de esas salsas de pocos ingredientes, pero con un fuerte sabor. La clave de la salsa está en la albahaca, llamada también basílico, hierba real o hierba de los reyes. Para algunas religiones es una planta sagrada, utilizada en tanto en rituales como en hechizos.

Tallarines en salsa amatriciana

La primera vez que probé una salsa con albahaca ha sido hace unos años en Roma. La salsa era muy simple: sólo tomate, albahaca y sal, pero notar tanto el sabor de albahaca en ese plato me ha convencido de que es una combinación muy compacta. La salsa amatriciana se basa en la combinación de tomate y albahaca. La mozzarella di bufala es una de las preferidas de los italianos: ligera y suave, un acompañamiento ideal para este plato caliente y refrescante al mismo tiempo. Una salsa sencilla, pero muy, muy agradable.

Raciones: 2 personas

Ingredientes

  • 350 gr tallarines
  • 300 ml tomate frito
  • 1 mozzarella de búfalo
  • 3 hojas de albahaca –o una cuchara de salsa pesto
  • 150 gr bacon en tiras
  • 1/2 cebolla cortada
  • Aceite de oliva, sal
  • Parmesano en polvo y orégano seco, para decorar

Elaboración paso a paso

  1. Ponemos la pasta a hervir.
  2. Cortamos la cebolla y el bacon –en caso de no comprarlo directamente en tiras–.
  3. Salteamos el bacon con la cebolla.
  4. En cuanto estén fritos, añadimos el tomate.
  5. Cortamos el queso de búfala en dados.
  6. Añadimos el queso a la sarten.
  7. Añadimos la albahaca cortada y una cucharita de sal –en vez de albahaca se puede usar una cuchara de salsa pesto, ya que es una salsa muy rica con mucho sabor a albahaca–.
  8. Mezclamos de vez en cuando hasta que se funda todo el queso en la salsa. Si no se mezcla el queso se pegará a la sartén.
  9. En cuanto la pasta esté hervida, la escurrimos y la añadimos a la salsa.
  10. Mezclamos la pasta en la salsa y lo dejamos todo a hervir unos 3 minutos para que la salsa se impregne en la pasta.

A la mesa

No hay mejor acompañamiento para la pasta que el queso parmesano, tanto para conseguir una buena decoración como por su sabor. Siendo la salsa amatriciana una salsa refrescante, le he añadido orégano por encima; así tiene incluso más aspecto y sabor mediterráneo.
